This is the front door to von Winning, one of the Pfalz's top producers of dry wine, and the exacting approach behind their Grosses Gewächs shows up here too. The fruit comes from several vineyards around Deidesheim, on limestone, loam and red sandstone. The vines are farmed organically, though the estate isn't certified. The top wines ferment in wood, but this one is fermented and aged entirely in stainless steel, so nothing gets between you and the Riesling and those soils. Winemaker Stephan Attmann describes his whole method as "not doing the wrong thing at the wrong time." It sounds modest, but it's why even the estate bottling comes across as carefully made. A bit of history: the estate is named for Leopold von Winning, a founding member of a 1910 growers' association that refused to add sugar to its wines. That's a fitting name for a house in Germany's warmest wine region, which is best known for its dry wines.

More about von Winning

Von Winning produces some of the finest dry wines in the Pfalz, if not all of Germany. Each wine, from an entry-level Riesling to the heralded Grosses Gewachs, is a microcosm of the Pfalz’s unique mineral profile, and of the fastidious winemaking at the estate.

Although the domaine was established in the 1860s, its fortunes rose in 2007 when Stephan Attman was appointed head winemaker. Stephan chose to abandon the stainless steel fermentation typically favored for Riesling and return to the old way of fermenting in wood, a practice that encourages structure and complexity.

V-W has vines in some of the most revered terroir in the Pfalz, including 8 different GG sites—no where else can you taste Riesling grown on such a diverse set of terroirs, including limestone, sandstone and volcanic basalt.

They are all fermented in large (typically old) oak barrels. The fermentation is long and slow, and the wines are aged on their lees for 1.5-2 years, producing a fascinating texture, simultaneously rich and ethereally fleeting.

The GGs of von Winning have virtually unlimited aging potential; there is a perfect balance struck between acidity, minerality and concentrated fruit.

Tasting Notes & Food Pairings

Perfect Pairings

Pork schnitzel with lemon and a cucumber-dill salad; pan-fried trout with brown butter and capers; Alsatian tarte flambée with bacon and onion; sushi and sashimi; Thai green papaya salad or chicken larb (go easy on the chili).

Tasting Profile

Expect the classic dry Pfalz Riesling profile: lemon, lime and ripe yellow apple, with a hint of white peach and a stony, mineral edge from the limestone and sandstone soils. Fermented and aged in steel with no oak, it should be medium-bodied and crisp, with bright acidity and a clean, dry finish.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
