Croatia's flagship white grape, grown on a mountainside so rocky there's barely any soil to speak of. Pošip is native to the island of Korčula and now planted across Dalmatia, but Zlatan's version comes from the mainland — the Bast vineyard on the south-facing flank of Mt. Biokovo above Makarska, where red clay topsoil sits over rugged limestone and the vines climb from sea level to around 350 meters. That altitude range is the whole trick: it keeps freshness and salinity in a grape that can otherwise turn sun-baked and heavy. Farming is organic, with no irrigation and only a minimal amount of powdered sulfur and occasional copper sprayed in spring and midsummer; yields are tiny, around 0.7 kg of fruit per vine. Hand-harvested, given a couple of days of skin contact, then cold-fermented at 16–18°C and aged eight months in stainless steel, so nothing gets between you and the fruit and the salt. Zlatan Otok is a family operation and one of Croatia's most respected names in native varieties — their Hvar winery is built from limestone boulders dug out of the cliffs above the sea, with a marina and open-air fish restaurant steps from the cellar door. Serve it cold, 10–12°C, the way they do it there.
