Two of Chablis's most rigorous growers making an Alsatian field blend — that's the hook, and it's as odd and delicious as it sounds. "Le Même Azimut" is a brand-new cuvée from the de Moors' Vendangeur Masqué label, their outlet for wines made from purchased fruit, here 50% Riesling with 30% Gewurztraminer, 10% Muscat and 10% Pinot Gris from an Alsatian grower they've worked with for a decade. Azimut means "direction," and the house says that's the point: a new direction, built on blending directly-pressed juice with macerated fruit. The farming is organic, the bunches are picked by hand, fermentation runs spontaneously on indigenous yeasts, and it ages on fine lees in barrel without bâtonnage before bottling unfiltered with a small dose of sulfur. It goes out as Vin de France, outside any appellation, because nothing about it fits a rulebook. At 12% it's a light-footed, thoroughly serious white for people who like their aromatic grapes bone-dry and unperfumed.

Tasting Profile

Dry and aromatic without being showy: citrus peel, white flowers, ginger and a little orchard fruit, with a faintly waxy, spicy edge from the Gewurztraminer and Muscat. Light-bodied at 12%, with brisk acidity, a fine, lees-drawn mid-palate, and a dry, savory finish.
