The flagship white from Sancerre's most obsessive biodynamic family, Edmond is proof that Sauvignon Blanc can age and layer like white Burgundy. Alphonse Mellot is the 19th generation to farm here, and while the family name alone would sell wine, they took the harder road: certified biodynamic, hand-harvested, no shortcuts. Edmond comes from the estate's oldest vines -- some 40 to 80-plus years -- rooted in the chalky Kimmeridgian marl that defines great Sancerre. It's barrel-fermented and raised for roughly eleven months in wood, including new demi-muids, which builds the texture and depth that set it apart from everyday Sancerre. Give it air now or cellar it; this is built to reward patience.
