A grower Champagne rose from a former professional ballet dancer who spent a decade on stage, from Bordeaux to Bangkok and San Francisco, before coming home to Champagne. Aurore Casanova and her husband Jean-Baptiste Robinet met studying viticulture and oenology in Avize and started the domaine in 2013 from Mardeuil, just west of Epernay, farming 3.5 hectares that include chalk parcels in Le Mesnil-sur-Oger and Oger in the Cote des Blancs, clay-silt over limestone at Puisieulx on the Montagne de Reims, and marl at Champvoisy in the Vallee de la Marne. The estate was certified organic in 2023 and is worked along biodynamic lines: hand harvesting, spontaneous fermentations, no fining, no filtration, and a perpetual reserve running back to 2016. This is a rose of assemblage, built from Chardonnay, Pinot Noir and Meunier and colored with roughly 12% still Pinot Noir, then aged two to three years on its lees. It drinks the way an aperitif rose should, pale and zesty and dry rather than broad and fruity.
