Favonius is the natural-leaning Lisboa project founded in 2021 by Rodrigo Martins and Pedro Cabanita, named for the Roman west wind that hammers this stretch of Portugal's Atlantic coast. The Pet-Nat - méthode ancestrale, finished in bottle on the lees - takes 100% Touriga Nacional picked early to lock in acidity and lower alcohol, then trades the variety's usual floral muscle for something fresh, fruity, and frankly fun. Cloudy, pink, lightly fizzy, low-intervention; the kind of bottle that ends the analytical part of the evening. Pop it cold and don't think too hard.
