The domaine's Folatieres parcel sits up-slope in the premier cru band on the same contour line as Chevalier-Montrachet, a little over an acre of forty-year-old vines on the steepest, thinnest, stoniest ground Puligny has. Soil that shallow over hard limestone gives a wine built vertically rather than horizontally: high-toned, floral, tense, with the salinity arriving before the fruit does. It is the mirror image of the domaine's Les Referts, which sits at the bottom of the same band on clay and comes out round. Marc and Alexandre Bachelet founded the estate in 2005 and press slowly, ferment with native yeasts in 350-liter barrels, and refuse batonnage entirely, a set of choices aimed squarely at keeping sites like this legible. The 2024 season was cold, wet and desperately short, and the whites that survived it are the most classically cut Burgundies in years. Cellar this five to ten.

"From a parcel in Ez Folatières near Truffières. Soft reduction still allows a suggestion of citrus rind to be seen. On the palate, there is excellent punch and volume to the delicious and seductively textured, even caressing, medium-bodied flavors that possess a subtle minerality on the moderately austere, balanced and impressively long bone-dry finish. This is nothing short of terrific and a wine that should also amply repay extended keeping. One to strongly consider."

"The 2024 Puligny-Montrachet Les Folatières 1er Cru is much more backward than the Les Referts at the moment. Crushed stone, a little more yellow fruit by comparison, a hint of orange blossom. It's alluringly standoffish! The palate is quite intense, focused and delineated. Not quite the amplitude or ambition of the Les Referts but it does fan out wonderfully on the finish, suggesting there is something there for those with the nous to leave it in the cellar for a few years." —Neal Martin

Turbot or sole in butter, langoustines, scallop crudo, a shellfish platter, or chicken with morels. Serve it cool but not cold so the aromatics open.

Tasting Profile

Aromas of white flowers, lemon oil, green apple and struck flint. Taut and linear on the palate, more about tension and salt than fruit weight, with piercing acidity. Long, chalky, mineral finish. Tightly coiled now and worth waiting on.
