This is bubbly made in Champagne's image at a fraction of the fuss, and it comes from the house that helped put Cremant de Bourgogne on the map. Bailly Lapierre works out of a former limestone quarry in Saint-Bris, cellars deep underground that hold the cool, steady conditions these wines love, drawing fruit from hundreds of growers across the Yonne. The Brut Reserve blends the appellation's four grapes, Pinot Noir, Chardonnay, Gamay, and Aligote, made by the traditional method with a year on the lees for depth. The result is round, easy, and thoroughly drinkable sparkling wine. Pour it as an aperitif, bring it to a party, or keep a few bottles on hand for whenever the mood strikes.
