A properly dry Prosecco that happens to be kosher, mevushal, under OU supervision and certified for Passover, which makes it the default bottle when a celebration has to work for everyone at the table. Bartenura is Royal Wine's Italian label, named for Rabbi Ovadiah of Bertinoro, the fifteenth-century scholar; the brand is best known for its blue-bottle Moscato, but this is the grown-up, bone-dry end of the range. It is made in the Veneto from Glera, the grape behind every Prosecco, and fermented in tank so the bubbles stay bright and the fruit stays fresh rather than bready. Brut here means genuinely dry, not off-dry. Serve it very cold, as an aperitivo or straight through a meal.
