This is rye for people who think they don't like rye. Golden Rye is made from a mash bill of 100% malted rye, and instead of the usual peppery punch you get something soft and approachable. It's the same mash bill Basil Hayden's used for its Malted Rye, now under a new name, and when that bottle launched the brand credited its malting process with turning rye's spice gentler and more mellow, with sweet and floral notes. It's a Kentucky Straight Rye from the James B. Beam Distilling Co. in Clermont, where Freddie Noe is the eighth-generation master distiller. The name suits a rye, too: it honours Meredith Basil Hayden Sr., a Maryland rye farmer who moved to Kentucky. Freddie's grandfather Booker Noe created Basil Hayden in 1992 as part of his Small Batch collection, and this is one of the brand's core bottles. We'd reach for it when we want a Manhattan a little rounder than usual.

Named after a distiller who favored higher rye ratios, Basil Hayden's is the lightest-bodied bourbon in the Jim Beam small-batch family—a collection that also includes Knob Creek, Booker's, and Baker's. Created in 1992 by 6th-generation Master Distiller Booker Noe, it weighs in at 80 proof, using Jim Beam's high-rye mashbill. It's approachable without compromising character—proof that restraint in spirits can be a statement.
