“Brut Sous Bois” is one of the most distinctive wines in Billecart-Salmon’s lineup, crafted entirely from wines vinified in oak barrels—a nod to the way Champagne was traditionally made before stainless steel took over. The name translates to “under wood,” referring to this full-barrel fermentation and aging, which adds depth and texture to the final wine.

It’s a blend of all three Champagne grapes—Chardonnay, Pinot Noir, and Pinot Meunier—sourced from Premier and Grand Cru vineyards across the Montagne de Reims, Côte des Blancs, and Vallée de la Marne. The base wines go through full malolactic fermentation and are then aged in used oak barrels (not new), preserving freshness while adding subtle oxidative complexity.

After secondary fermentation, the wine spends six to seven years on the lees, far longer than typical NV Champagnes. The dosage is moderate, around 7 g/L, which balances the wine’s natural structure and toastiness without tipping into richness.

Brut Sous Bois offers a layered profile of baked orchard fruit, spice, roasted nuts, and saline minerality, with a creamy texture and long, dry finish. It’s Champagne for those who enjoy the intersection of classic and bold, with structure that makes it highly versatile at the table.

Antonio Galloni

"Rich, radiant and resonant, the Brut NV Sous Bois is wonderfully expressive. Dried orchard fruit, spice and chamomile build nicely with aeration. This release is based on 2015 with 40% reserve wines, a blend that works so well. Delicate floral and dried herb notes linger. Dosage is 5 grams per liter." —Antonio Galloni

Robert Parker

91 points

"Heavily based on the 2017 vintage (with 34% reserve wines dating back to 2006), fermented at low temperatures and entirely vinified in oak, the NV Le Sous Bois blends fruit from vast areas of Montagne de Reims, Vallée de la Marne and Côte des Blancs (notably Oger, Chouilly and Cramant). Disgorged with a dosage of five grams per liter in spring 2023, after five years of lees aging, it reveals aromas of green apple, vanilla, peach and toasted nuts, mingling with hints of caramelized sugar. On the palate, it is medium to full-bodied, precise and fine-boned, featuring a youthful fruit core supported by vibrant acidity, with subtle bitter phenolics asserting themselves on the finish. Given the challenges of the growing season, it incorporates a higher proportion of Chardonnay than usual." —Kristaps Karklins

Wine Spectator

93 points

"Fragrant, with hints of graphite, cherry blossoms and spices, revealing a firm frame of vivid acidity that's tightly meshed with flavors of blackberry tart, lemon granita and salted Marcona almond. Shows a raw silk–textured mousse that carries a chalky note on the finish. Pinot Noir, Pinot Meunier and Chardonnay."

Wine Enthusiast

"With 40% of older reserve wines in the blend, this Champagne was fermented in wood. Its aroma brings out toastiness, while on the palate, the richness of the wine suggests maturity. It is a finely balanced wine."

More about Billecart-Salmon

Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ with the marriage of Nicolas François Billecart and Elisabeth Salmon, and more than two centuries later it remains one of the few great Champagne houses still owned and run by the founding family. Mathieu Roland-Billecart, the seventh generation, has led the house since 2019, pushing it toward more sustainable farming with no herbicides and more biodiversity in the vines. The style is all finesse: precise, elegant Champagnes that make Billecart one of the most beloved names in the region.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
