A 2.5-hectare terraced vineyard on the flank of a spent volcanic crater above Trecastagni, farmed by the Biondi family for more than two hundred years, and bottled in the low thousands. Like everything Ciro Biondi makes, it comes from Etna's southeast slope - the warmer, more sheltered face of the volcano, which gives whites that are more perfumed and open-knit than the tighter wines of the north side. Pianta is Carricante with Catarratto and Minnella, the old companions of Etna's field blends, fermented as well as aged in wood (225- and 500-liter barrels), which is Biondi's way of building texture without leaving overt oak. Four years on from the harvest it has filled out into the almondy, intensely mineral wine this site is known for, with the volcanic snap fully intact. Give it a big glass and serve it cool rather than cold.
