Phylloxera never reached the Canary Islands, so the vines behind this wine are the real thing: ungrafted, more than a century old, and trained in cordón trenzado — canes braided together into long ropes that snake across the ground, a method Tenerife kept long after the rest of Europe gave up on it. Finca la Habanera is a single 0.6-hectare parcel at 600 to 700 meters on a northeast-facing slope in the Valle de la Orotava, pitched as steep as 40% in places, with lava, sand and pumice underfoot. Carlos García took the estate over from his father Américo in 2020 and converted the farming to organic. The Listán Blanco is pressed with deliberate oxidation of the must before fermentation, a trick borrowed from Chardonnay winemaking that strips out the fragile compounds and leaves a wine that ages calmly; it then ferments on native yeasts and rests three to four months on its lees in tank, with no oak at any point. Tiny production from a very small parcel.
