Camille and Mathieu Apffel make Alpine natural wines in Savoie, and Avant la Tempête — 'Before the Storm' — carries some drama in the name. This is Jacquère with mountain snap: native fermentation, a light hand in the cellar, and the kind of saline, citrus-driven freshness that makes Savoie whites so compelling. The wine is about lift rather than weight, precision rather than polish, and it belongs with raclette, fondue, lake fish, or anything that wants a clean Alpine edge.

More about Camille & Mathieu Apffel

Alpine wine at its most hands-on: Camille and Mathieu Apffel do every job in the vineyard and the cellar themselves, with no employees, and they bottle their Savoie wines without any added sulfur.

Mathieu grew up in the Jura and came to Savoie in 2013, making Apremont with a friend before buying a cellar and vines from a retiring vigneron in 2017. Camille joined him in 2020. Home base is Saint-Baldoph, just south of Chambéry, where Jacquère vines 30 to 70 years old face southeast at 250 to 350 meters on clay and limestone strewn with mica-schist and quartz left behind by ancient glaciers. A steep, gravelly limestone hill in Saint-Alban and a parcel in neighboring Bugey round out about four and a half hectares, all worked by hand and farmed organically (uncertified), with biodynamic practices.

Mathieu thinks of his reds as infusions rather than extractions: whole clusters, gentle handling, and the color and tannin coaxed out rather than wrung out. Everything ferments on native yeasts and is bottled unfiltered. Most of what they make is white, led by the Jacquère Avant la Tempête, while Soleyane brings Mondeuse and Pinot Noir from Bugey into a light, chillable red.
