Zero sulfur, start to finish — none at harvest, none in the vat, none at bottling — and yet this is no fragile, drink-it-tomorrow curiosity. Nuits d'Ivresse ("drunken nights") is the Bretons' proof that a serious, age-worthy Cabernet Franc can be made with nothing added at all, drawn from limestone tuffeau terroirs east of Bourgueil in Restigné. The family are fifth-generation vignerons who went organic back in 1985 and were already vinifying this cuvée sulfur-free by 1995, long before natural wine had a marketing department. Grapes are hand-picked into 20-kilo crates, and aged in a cool troglodyte cellar carved into the rock. One practical note, and it comes from the Bretons themselves: with no chemical antioxidant in the bottle, keep it below 14°C and out of the light. Do that and you have one of the Loire's great arguments for doing less.

Fifth-generation vignerons in Restigné took a radical leap in 1985: convert to organic, then biodynamic, then natural winemaking. Catherine and Pierre believed the terroir could speak if they got out of its way. By 1995, they were vinifying without sulfur (cuvée 'Nuit d'Ivresse'). Hand-harvested, wild-yeast Cabernet Francs from Bourgueil and Chinon emerge as powerfully structured vins de garde—mineral, floral, hauntingly perfumed, shaped by gravel, clay, or tuffeau soils. Perfect Pairings

The Bretons' own suggestion is a marbled rib of beef or a well-raised pork chop. It also loves charcuterie and rillettes, duck confit with lentils, roast chicken with herbs, or a plate of grilled sausages and mustard.

Tasting Profile

Dry, medium-bodied red Cabernet Franc: red fruit and violets with the leafy, peppery edge typical of Bourgueil, plus a chalky note from the tuffeau limestone. Bright acidity, fine and supple tannins, no obvious oak. Finishes fresh and savory. Store it cool and dark, and serve with a slight chill.
