This sparkling wine is built on Escursac, a red Mallorcan grape so rare that Cati Ribot is, as far as anyone knows, the only person in the world bottling it on its own. Earlier vintages also included Fogoneu. Cati makes Bosquet as a rosé pét-nat using the ancestral method, with no added sulfur. She stopped using sulfur in the winery altogether when she took over her family's estate in Santa Margalida, in northeast Mallorca, in 2019. "Bosquet" is Mallorquin for a troublemaker or good-for-nothing, which is about right for a pét-nat. It's also a great way to see what's happening on the island. After working as a sommelier in Barcelona, Cati replaced her father's Chardonnay and Cabernet with late-ripening, drought-tolerant native grapes that keep their freshness in the Mediterranean heat.

More about Cati Ribot

Cati Ribot is rewriting Mallorca's story, one ancient vine at a time. After discovering natural wines in Barcelona, she ditched the family's international-variety playbook and started hunting down forgotten indigenous grapes—Callet, Negrella, and others that nearly vanished. Her wines are gritty, authentic, and wildly different from anything else on the island. A third-generation winemaker choosing the hard path to say something real.

Tasting Notes & Food Pairings

Perfect Pairings

Pa amb oli topped with jamón and tomato; sobrassada on toast with a drizzle of honey; fried calamari or salt-cod fritters; grilled sardines; a picnic of Manchego, olives and marcona almonds.

Tasting Profile

Expect a bright, dry rosé pét-nat in the natural style: delicate red fruit like wild strawberry and redcurrant, a soft, frothy bubble and the lively acidity Escursac keeps even in the Mallorcan heat. It's typically light and moderate in alcohol with barely any tannin, and finishes crisp and a little rustic. Think of a juicier, more savoury take on dry sparkling rosé.
