Vignolo is a 3-hectare cru in Castiglione Falletto where Cavallotto farms 1.9 hectares (the family acquired roughly 60% of the cru in 1989 and was the first to bottle it as a single vineyard) — a family-farmed holding in the cru, every bottle from their vines. As Riserva, this 2000 spent a minimum of five years aging in traditional Slavonian botti before release, and another twenty in bottle since. The 2000 vintage was warm and forward, and at 25 years on this is a fully mature Barolo from one of the appellation's most steadfast traditionalists — no modernist shortcuts, just patient extraction and long wood. The wine has shed any youthful firmness and is now in that quiet, perfumed phase where great traditional Barolo earns its reputation. More about Cavallotto

The village of Castiglione Falletto is rich with superstars—Giuseppe Mascarello, Brovia, Vietti, Scavino—and Cavallotto stands easily with the best of them. Of this elite group, Cavallotto's wines stand out for their deep fruit, brooding structure, rose petal aromatics, and incredible longevity.

Most of Cavallotto's grapes come from a hill called Bricco Boschis. Cavallotto owns all of it. Thanks to a mostly southern exposure at high altitude and a complex mix of limestone and clay, it's considered one of the top crus of a village known for many great crus. Cavallotto's San Giuseppe Riserva is made from the best grapes from the vineyard's oldest vines, mid-slope.

Cavallotto's other Riserva comes from Vignolo. It is next door to Bricco Boschis and just a little lower down the slope. The wine tends to be less powerful and more floral, and is perfect for drinking on a slightly earlier timescale than the San Giuseppe.

Perfect Pairings

A wine for slow Sundays — brasato, agnolotti in butter and sage, or roasted guinea hen with white truffle if it's the season. Aged Castelmagno or Bra duro round it out beautifully without overwhelming.

Tasting Profile

Mature, layered, gently savory. Dried cherry and plum, tobacco leaf, leather, sweet anise, and dried herbs. Tannins fully resolved, acidity holding everything in suspension. Long, perfumed, with the classic gently bitter Barolo finish.
