One of the reference bottlings for Lambrusco di Sorbara, and a wine that makes the case for sparkling red as a serious aperitif. The Cristo vineyard is five hectares in the Sorbara hamlet, just 200 meters from the Secchia River, where cool air off the water preserves the acidity and floral lift that set Sorbara apart from the darker, fleshier Lambruscos. Cavicchioli & Figli created the bottling in 1987 to mark the winery's 60th anniversary, and it remains 100% Lambrusco di Sorbara, even though the DOC would allow up to 40% Salamino to fill it out. Only half the free-run juice goes through the second fermentation in autoclave, which keeps the wine light on its feet: pale purplish red with a dusty pink froth, bone dry, with total acidity around 8 g/L. Serve it cold, in a white wine glass, next to a plate of oysters.
