Richard Fouquet, fifth-generation custodian of this 1885 family house in Cramant, crafts Tethys from Chardonnay vines rooted in Campanian chalk formed 70 million years ago. The wine is a pure blanc de blancs with a restrained1.5 g/L dosage and spends 24 months sur lattes to develop complexity. Bright, mineral-driven, with lemon zest and white flower aromatics that give way to citrus, pear, and a saline, sapid finish. The terroir speaks through distinct chalky minerality, making this an elegant aperitif or seafood partner.

"The NV (2022) Extra Brut Blanc de Blancs Téthys Grand Cru is wiry and tightly wound. Brisk, piercing acids are something of a surprise, but that works so well here. Dried pear, white flowers, chalk, mint and dried lemon peel sizzle across the palate. This taut, vibrant Champagne has a lot to offer. I especially admire how it fleshes out with a bit of time in the glass. The Tethys is a blend of four sites in the Côte des Blancs, vinified and aged in tank, with full malolactic fermentation. Dosage is 1.5 grams per liter. Disgorged: January 2025; multiple disgorgements throughout the year." —Antonio Galloni
