A classic of Napa's most iconic hillside, with the polish of seventeen years in the cellar. Chappellet planted Pritchard Hill in 1967 — they were the pioneers of that now-legendary eastern Napa ridge — and the Signature Cabernet has anchored the family portfolio for more than five decades. Donn Chappellet's vision was always for a Cabernet of restraint and longevity rather than brawn, and the 2008 (77% Cabernet Sauvignon with Malbec, Merlot, and Petit Verdot rounding things out) was praised on release for its mid-weight elegance. Now in its drinking window, it's evolved into the gracious, secondary version of itself: sweet dark fruit threaded through tobacco, cedar, dried herbs, and that signature volcanic-soil minerality from the hillside.

"I was quite taken with both wines I tasted from Chappellet, the pioneer of first-class winemaking on the gorgeous hillsides of Pritchard Hill. The 2008 Cabernet Sauvignon Signature is a gorgeous, mid-weight wine laced with sweet dark plums, black cherries, menthol, tobacco and flowers. This gracious Cabernet Sauvignon-based red possesses lovely balance in an understated style. It should drink well for the next 5-7 years, perhaps longer. In the 2008 the blend is 77% Cabernet Sauvignon, 9% Malbec, 9% Merlot and 5% Petite Verdot." —Antonio Galloni

Perfect Pairings

Pour with grilled lamb chops with rosemary, herb-crusted prime rib, duck breast with cherry reduction, or wild mushroom polenta with shaved Parmigiano. The maturity also welcomes a cheese course of aged Gruyère or Mimolette.

Tasting Profile

Mid-weight, gracious, mature. Dark plum, dried cherry, tobacco leaf, cedar, dried mint, and hillside minerality. Tannins resolved; texture polished. Restrained, classical Pritchard Hill Cabernet in its evolved phase.
