A quarter-century on, this is mature Bordeaux with nothing left to prove and nothing left to wait for. Cantemerle sits at the southern edge of the Haut-Médoc in Macau and Ludon-Médoc, where poor soils of gravel, dark sand and small stones make the vines struggle and concentrate the fruit; the blend is Cabernet Sauvignon-led, rounded out with Merlot, Petit Verdot and Cabernet Franc. What sets the estate apart is what it declines to do — no piling on of new oak, no softening of the Cabernet, and a cellar that still works with old wooden and cement vats alongside steel. The 2000 has always been the gentler, more perfumed side of that great vintage rather than the muscular one, and it is now fully resolved: medium-bodied, sweetly fruited and secondary. Stand the bottle upright for a day, decant it gently off its sediment, and drink it over dinner rather than saving it.

"Changed hands in 1981 with only 20ha left of a large property. Still very deep with the merest hint of ruby and paleness at the rim. Very subtle nose – lures you in but there is no hint of overripeness here, rather a hidden message. Fresh and succulent with hints of tea and toast but very subtle ones. Really quite delicate and beautifully balanced. Neat, medium finish."

Cantemerle is a 5th growth, located in Haut-Medoc with vineyards very close to Margaux. And, like a classic, mature Marguax, Cantemerle shows a wonderfully complex, spicy bouquet with age: tobacco, smoke, and mineral-infused cherry notes fill the nose before you even get close to the glass.

Perfect Pairings

Roast leg of lamb, steak frites, roast duck, or a mushroom and beef pie. Aged Comté or a mild washed-rind cheese works well too.

Tasting Profile

Sweet tobacco, cedar, dried cherry and blackcurrant, with forest floor and earth from bottle age. Medium-bodied and soft in texture, tannins fully resolved, acidity still bright. Gently tart red-fruit finish.
