Only eight barrels made the cut in 2010. Les Cinq ("The Five") is Château de Chamirey's pick of the cellar: the best casks from each of its five red Premier Cru vineyards in Mercurey, blended into a single cuvée. Those five sites are Les Ruelles (a monopole, meaning the domaine owns all of it), Clos du Roi, Sazenay, Clos l'Evêque and Champ Martin. Bertrand, Amaury and Aurore Devillard, heirs of the Marquis de Jouennes, created the cuvée and launched it with the 2009 vintage, so this is only its second release. The 2010 was hand-harvested, sorted and fully destemmed, then fermented for 15 to 18 days in open tanks with punch-downs and aged entirely in barrel, half of it new. Mercurey sits in the Côte Chalonnaise and rarely gets this kind of top-barrel treatment. That makes Les Cinq a smart way to see how serious the appellation can be without paying Côte d'Or prices. The producer's advice at release was to cellar it three to five years, so this bottle has had more than enough time. Serve it at 13–15°C, which is cool cellar temperature.

Tasting Notes & Food Pairings

Perfect Pairings

Roast duck breast with a cherry or balsamic reduction; beef bourguignon; wild mushroom and thyme risotto; braised lamb shoulder; aged Comté.

Tasting Profile

Expect the classic Mercurey Premier Cru profile: red cherry and raspberry with earthy, savoury notes and a touch of spice and toast from barrel ageing. Medium-bodied, with fresh acidity and firm, fine tannins, it typically finishes dry and lingering. Think a slightly sturdier, earthier take on Côte de Beaune Pinot Noir.
