All Merlot, from one of Bordeaux's great modern vintages, and now twenty-six years down the road. Chateau Poupille sits on south-facing clay-limestone slopes in Castillon, just east of Saint-Emilion, and Philippe Carrille is the fifth generation of his family to farm it; he later took the estate to organic certification in 2008. The 2000 vintage handed the right bank a near-perfect September for Merlot, producing wines that were ripe and round but with more acidity than usual underneath — the reason they have held up so well. This is drinking at full maturity now: the tannins have softened out, the fruit has gone savory, and there is nothing to be gained by waiting. Decant gently to leave the sediment in the bottle.
