A pale, dry Cotes de Provence rose that is also kosher and mevushal - flash-pasteurized, which is what mevushal means, so it stays kosher no matter who pours it. That makes it genuinely useful for entertaining, and it doesn't ask you to trade down on the wine. Chateau Sainte Beatrice is a fifty-hectare estate in Lorgues, in the Var, bought in 2016 by Valerie Rousselle, who has owned nearby Chateau Roubine - a Cotes de Provence Cru Classe - since 1994. The blend is the Provencal standard of Cinsault, Grenache and Syrah grown on clay-limestone soils, pressed straight to pale pink and raised in stainless steel with no oak involved. At 12.5% alcohol it is the estate's everyday bottling in the best sense: light, dry and built for a long lunch. Serve it very cold.
