The smallest of all the 1855 classed growths, and here it is at half a century old. Chateau Sigalas-Rabaud is a Premier Cru Classe in the commune of Bommes — just 14 hectares on a gravelly, south-facing rise — planted overwhelmingly to Semillon with a little Sauvignon Blanc and a trace of Muscadelle, and run by the Lambert des Granges family since 1950. The sweetness comes from botrytis, the 'noble rot' that shrivels berries on the vine and concentrates them, with pickers going through the vineyard in successive passes. 1975 was a vintage that paid off for the patient: a dry autumn meant the rot arrived slowly, and the estates that waited made rich, balanced wines that have aged very well. Assuming it has been well stored, a Sauternes of this age has traded some of its sweetness for savory complexity — caramel, dried fruit, a note of tea. Stand the bottle up, decant off the sediment, and serve it well chilled.
