A classical Kakhetian amber wine made the old way — skins, seeds and stems fermented together in clay qvevri buried underground, wild yeast only, seven months on the solids, no fining, no filtration. It's a co-planting of Rkatsiteli and Kakhuri Mtsvane from Sachaleebi, a single hectare on brown forest soil and calcareous clay in the village of Vachnadziani, a micro-zone of Mukuzani. Nino Chitoshvili came to this by an unlikely route: a Tbilisi pianist by training who fell for wine through philosophy and art, worked as a wine tour guide, and buried her first qvevri in her own courtyard for the 2017 vintage. She still does essentially all the vineyard work herself, farming organically and building the estate parcel by parcel, and total production across all her wines tops out around 10,000 bottles a year. For anyone who thinks orange wine means heavy and oxidative, this is the corrective — the house style here runs to high mineral drive, light texture and an elegant frame rather than bulk.

Perfect Pairings

Built for the Georgian table — khachapuri, badrijani nigvzit (walnut-stuffed eggplant), lamb and herb stews, pkhali. Also excellent with roast chicken and tarragon, grilled quail, Moroccan chicken tagine with apricots, or a board of aged sheep's cheeses and cured ham.

Tasting Profile

Aromas of melon, apricot and dried fruit with wild herbs and a touch of tea. Light to medium bodied, with fine grippy tannins from the long skin and stem contact rather than any weight or sweetness. Bone dry, mineral, with a clean, faintly earthy finish. Serve cool but not cold.
