Les Lizieres is the quintessential bistro red: fresh and pithy enough to serve with a chill, structured enough for lunchtime fare, and earthy enough to remind you it comes from somewhere specific. Clotilde Legrand farms 16 hectares around Varrains in Saumur-Champigny, vines averaging 45 years, on the chalky tuffeau limestone that runs under this whole corner of the Loire - and she works out of cellars her family cut by hand into that rock. She took the estate over from her father in 2014 and has spent the years since improving the farming and taking her hands off the winemaking: cover crops, hand harvesting, plot-by-plot vinification, ageing in tank so the fruit stays bright. Her neighbors in Varrains are the most famous names in Saumur, and her prices have not caught up. Serve it around 60 degrees, or a touch cooler in warm weather.

Tasting Profile

Fresh black cherry and raspberry with pipe tobacco and a clay-earth note on the finish. Medium-bodied, with fine tannins and lively acidity. Juicy, perfumed and easy to drink, chilled or not.
