Ross Cobb resists the California temptation to pick early in pursuit of acidity - his sites are cold enough that he doesn't have to, and the wines come out layered rather than lean. Mes Filles is a half-hectare of Chardonnay planted in 1998 in the fog-belt hills above Occidental, about six miles from the Pacific, sitting at 500 feet on Goldridge sandy loam and farmed biodynamically. Cobb has a soil science degree and a resume running through Williams Selyem, Flowers and Hirsch, and he keeps the cellar work out of the way here: native-yeast fermentation, largely neutral oak, nothing to obscure the site. The result reads closer to Chablis than to Napa - saline, flinty, linear - but with the mid-palate depth that separates Cobb from the merely crisp. From half a hectare of vines, there is never much of it.

Stephen and Ross Cobb are Pinot Noir obsessives working small, single-vineyard parcels on the far Sonoma Coast where their parents planted the first vines in Coastlands Vineyard back in 1989. Founded in 2001, they've stayed focused—Pinot Noir from coastal benchland, plus small amounts of Chardonnay and Riesling. No oak overload, no show.
