An amber wine from one of Georgia's least-exported regions. Dato's Wine is the family cellar of David Kobidze, working in the village of Erketi in Guria, a lush, rainy zone in western Georgia that sits well off the qvevri-tourism trail of Kakheti. Chkhaveri is Guria's endemic grape, a pale-skinned red that gets bottled here as amber, rosé, or red depending on the vintage. For this bottling, the hand-harvested fruit is crushed and only the free-run juice goes into qvevri, where it ferments with wild yeast and minimal skin contact. The result reads more like a textured white than a heavy orange wine: pale amber in the glass, lifted and floral, with the salinity and savory edge that only buried clay seems to coax out. Part of the fruit is sourced from a single vine over 100 years old.
