Vin Jaune is the Jura's great eccentric, and few families know it better than the Bourdys of Arlay. It's dry Savagnin, and at Bourdy it spends seven years in small, old oak barrels that are never topped up. A film of yeast forms on the surface, and that's where the nutty, curry-spice character comes from. It tastes unlike any other white you'll drink. The vines grow on deep grey clays and old Lias and Triassic marls, and the Jura's heavy rain keeps those soils cool enough to hold on to Savagnin's naturally high acidity. That acidity is the backbone that lets these wines last, and the family still keeps Château-Chalon going back to 1865 to prove it. The domaine farms biodynamically, and Laura Bourdy took over in 2022. If Vin Jaune is new to you, this is a proper introduction from a house that has been doing it the old way for centuries.

"The pungent and textbook 2017 Côtes du Jura Armand Vin Jaune has notes of iodine, peat, more mushrooms, celery and curry. It has a bright and pale golden color, denoting freshness and youth. It was produced with grapes from old vines on gray clay and marl soils. The clusters were pressed and the juice let to settle for one day before fermenting. It matured in used small barrels for close to seven years, during which time, 30% of the volume evaporated and the wine became further concentrated. It, of course, developed a thin layer of flor yeasts that protected it from oxidation and gave it the spicy and yeasty nose and a tasty, bittersweet and salty palate. It's an excellent example of the traditional style unique to Jura. Lovely. It has a dry, chalky and tasty finish. This style of wine ages for a very long time in bottle." —Luis Gutiérrez

Perfect Pairings

Aged Comté; chicken with morels in a cream sauce (the Jura classic); a mild yellow curry or chicken korma; roast walnuts; pan-seared trout with brown butter.

Tasting Profile

Bright golden colour. It smells of walnuts and toasted nuts, with a curry-spice note. Dry and powerful, with a full body held up by high acidity. The finish is very long and nutty.
