If you want to taste what the Beaujolais natural-wine movement actually sounded like before it became a category, this is the address. Jean-Claude "Le Chat" Chanudet took over the 18th-century Domaine Chamonard in 1989 and has spent decades working in the semi-carbonic style of Jules Chauvet, the chemist-philosopher whose thinking underpins the whole movement — Eric Texier reckons nobody comes closer to doing it the way Chauvet intended. Chamonard sits right alongside the Gang of Four, sometimes counted as the fifth member of a "Gang of Five," and Chanudet has long been the region's enfant terrible. The estate is tiny — 5.5 hectares all told, the vast majority of it Morgon, seven parcels scattered across the Grands Cras, Le Colombien and Château Gaillard sectors, plus a slice of the steep Fleurie hill of La Madone. Morgon is arguably the most famous of the ten crus, and its blue-tinged granite and decomposed schist (the locals call it "rotten") is what gives these Gamays their savory grip rather than mere fruit.

Perfect Pairings

Roast chicken with mustard pan sauce, charcuterie and cornichons, lentils with saucisson, mushroom tart, or a burger. Lightly chilled, it's also a fine match for grilled salmon or a plate of Comté.

Tasting Profile

Dry red, medium-light in body. Red cherry, raspberry and a little dried herb and black pepper, with a savory, stony edge from the granite. Bright acidity, fine soft tannins, and a clean finish that leans more mineral than sweet-fruited. Best with a slight chill.
