Domaine d’Aupilhac, led by the visionary Sylvain Fadat, is one of the defining producers of Montpeyroux, crafting wines that showcase the rugged beauty of this Languedoc terroir. La Boda—which means “the wedding” in Spanish—blends Syrah from limestone soils with Mourvèdre from schist, bringing together power and finesse in a wine built for long aging. The 2015 vintage, now beautifully maturing, highlights the balance between richness and freshness that makes Montpeyroux such a compelling appellation.

Blackberry, plum, and cassis form the wine’s foundation, layered with garrigue herbs, black olive, and a touch of smoked meat. The tannins, once firm, have begun to soften, allowing the wine’s savory depth and mineral complexity to emerge fully. Aged in large oak barrels, La Boda retains purity and a sense of place, avoiding excessive oak influence in favor of structure and elegance.

Best enjoyed with slow-braised lamb, grilled duck, or aged cheeses, this is a wine that rewards both patience and thoughtful pairings. Decant if drinking now, or cellar for another 5–10 years to watch its layers continue to unfold.
