Bellivière makes a Pineau d'Aunis every year, but only in the vintages that earn it do they set aside their oldest vines — 0.9 hectare of centenarians — for this bottling. It's the estate's most serious expression of a grape that grows almost nowhere else in quantity, from the Coteaux du Loir, a tiny appellation on the Loir — not the Loire — that the 1956 frost nearly erased. The parcel is more than a trophy: every massale cutting used to replace spent Pineau d'Aunis elsewhere on the estate comes from these vines, which makes it the genetic heart of the domaine. Farming is certified biodynamic and everything, harvest included, is done by hand; the destemmed fruit ferments with native yeasts in used 500-liter barrels with minimal sulfur and stays there about a year, so nothing gets between the grape and the glass. Yields are miniscule, which is the honest explanation for why this doesn't exist in most years. The name honors Louis Derré, the local who helped Eric and Christine Nicolas — outsiders to wine when they arrived in the 1990s — find their footing and their first vines in an insular corner of France. Give it time, or give it air.
