Bone-dry Chenin from a parcel at the top of the slope, where 40-to-60-year-old vines face south over sand and clay with only two or three meters of topsoil before you hit pure limestone — which is exactly where the wine's tension comes from. Jacky Blot did as much as anyone to define what Montlouis-sur-Loire means, and his method is the opposite of the clean, cold, quick fermentation most white wine gets: indigenous yeasts, deliberate early exposure to oxygen, a long slow fermentation in barrel (20% new, the rest one to four years old), malolactic blocked, then months resting in steel before bottling to firm up the texture. He refused residual sugar on principle, convinced that even a few grams blur Chenin's transparency — he called it "the school of Montlouis." The vines are farmed organically. Blot has since died and his son Jean-Philippe runs the estate now, which makes these bottles feel like both an inheritance and an argument still being won.

Few winemakers have come to define an appellation like Jacky Blot has come to define Montlouis-Sur-Loire. He’s an authority on Chenin Blanc, and while his still wines are dynamic, enchanting distillations of this noble grape, it was his "Triple Zero" sparkler that made us swoon upon first sip.

At Domaine des Tailles Aux Loups, the estate he’s owned since the late ‘80s, the focus is on pure and elegant Chenin, without any distractions—the wines are bone dry, and the pétillant wines are fermented and aged in old, neutral barrels. Borrowing from Burgundy, the fermentation is long and slow, deep in the estate’s cold cellars.

The consistent greatness of these wines lies not just in deft winemaking, but also in decades of high-quality of viticulture. The domaine has been organic since the late 80s (way before it was cool), and employs some biodynamic techniques as well. Yields are very low, and the vines are typically quite old.

If you like Chenin Blanc – or even if you're just a fan of killer white wines – these simply have to be tasted; there are very few wines priced like this which can deliver so much.

Perfect Pairings

Roast chicken with tarragon, scallops seared in brown butter, goat cheese from up the river (Sainte-Maure, Selles-sur-Cher), pork loin with mustard cream, or a plate of oysters and rye bread.

Tasting Profile

Dry and quite taut, with quince, yellow apple and dried pear aromas, a touch of chamomile and beeswax from the barrel aging. Medium-bodied but firm rather than plush — the blocked malolactic leaves the acidity bright and linear. Chalky, faintly bitter-citrus finish that goes long. No sweetness at all.
