Perfect Pairings

Sip neat after dinner with apple tarte Tatin, Norman apple cake, or aged Camembert and Pont-l'Eveque. Excellent in a Calvados Sidecar or an apple Old Fashioned. Also a classic trou normand between rich courses — roast pork, duck, or a heavy cheese board.

Tasting Profile

Orchard fruit leads: baked apple, pear skin, a little quince, with oak lending gentle vanilla and toasted spice. Dry on the palate, medium-bodied, warming rather than hot, with the fruit staying juicy through the middle. The finish is long and appley, with a dry, slightly nutty edge.
