From the biodynamic Sulauze estate in the tiny village of Miramas, Pomponette blends Grenache, Cinsault, Syrah, Mourvèdre, and Rolle into a Provençal rosé of perfect balance and delicacy. Grapes are hand-harvested from 15-year-old vines planted in clay and sandstone, then fermented wild with minimal sulfur and no filtration. Karina and Guillaume Lefèvre bought this 29-hectare Provence estate in 2004 after Coup de Foudre and converted to organic then biodynamic viticulture. Their flagship Pomponette rosé is fermented with indigenous yeast from a blend of Grenache, Cinsault, Syrah, Mourvèdre, and Vermentino. It tastes like a trip to the Côte d'Azur in a glass—crisp, mineral, alive with sea salt.
