Édouard and Eleni Vocoret make some of the most exciting new-wave Chablis around — single parcels, wild yeasts, no new oak, minimal sulfur — and 'Forest' (Les Forêts) is their taut, structured premier cru. It sits on the left bank in the Montmains sector, on poor Kimmeridgian soils with cool east-southeast exposure and old vines dating to the 1970s and 80s. Reputedly the best slice of Montmains, its character runs close to Grand Cru Blanchot: linear, mineral, and driven by a firm backbone of tension and cut rather than flesh. In the tiny 2024 vintage, it's all precision — chiseled, saline, and racy. Premier Cru Chablis for people who love the appellation's sharpest, most electric edge.

It is more lightly structured this year, though it remains quintessentially Chablis.
