Where the previous Ilarria blanc offered mountain freshness, this rouge delivers mountain power—Tannat, Cabernet Franc, and Cabernet Sauvignon from the same vertiginous Pyrenean slopes of Irouléguy. Peio Espil's organic, minimal-intervention approach lets the terroir speak: dark fruit, wild herbs, and a firm tannic spine that softens beautifully with food. Irouléguy reds carry an untamed character that sets them apart from anything else in France. The 2022 has had just enough time to knit together while retaining its wild energy.
