Les Bergères is one parcel, one grape, one vintage — and almost no sugar to hide behind. Vincent Lagille farms this south-facing site in Treslon, in the Vallée de l'Ardre, where Pinot Noir vines approaching forty years old dig into clay and limestone. He ferments in seasoned barrels, ages the wine patiently, and finishes it with little to no dosage, which is a confident thing to do: with nothing sweet to round the edges, the fruit and the chalk have to carry the whole wine themselves. They manage it. Expect a blanc de noirs with real breadth — red apple and stone fruit, a smoky savory edge from the wood, and a firm, mouthwatering close. Lagille makes only around 50,000 bottles a year across the entire estate, so bottles like this don't travel far.
