The Jura's reculees are blind valleys carved into the same Jurassic shelf that gave the region its name, and Pignier calls this Chardonnay after one. The estate traces back to 13th-century Carthusian monks and still ages its wines in their cold stone cellars, but the farming is thoroughly modern-minded: biodynamic, certified by both Demeter and Ecocert, with the family preparing their own treatments. This is a topped-up, non-oxidative Chardonnay raised mostly in used Burgundy barrels, so you get texture and depth without oxidative funk or heavy oak. Grown on clay-limestone that mirrors the Cote d'Or, it's the Jura's answer to great white Burgundy, with a wild, mineral streak all its own.

More about Pignier

On hillsides in Montaigu, Jura, Domaine Pignier has been making wine since the 13th century when Carthusian monks planted the first vines on the Jura's rocky slopes. The Pignier family acquired the estate in 1794 and continue working it today with biodynamic principles. These wines pull Chardonnay, Savagnin, and red varieties into expressions of Alpine intensity and precision. Polaner Selections brings them to America. Jura's most serious voice.

Flatiron's Take

From the Importer

What Polaner Selections has to say about this wine:

Biodynamic

Certified

Vineyard

The vines are located in the Val de Sorne gorge on Montaigu's southern slope.

Orientation

South/southeast-facing

Soil

Clay-limestone soils from the Rhaetian stage

Viticulture

Vineyards are farmed using biodynamic methods and the estate is Demeter certified. Because Pignier is the only grower in the village of Montaigu, they do not have to worry about the influences (such as chemical treatments) of neighboring domaines. All grapes are hand harvested.

Vinification

De-stemmed and vinified in a combination of larger wood tanks and stainless using natural yeasts. This wine is made with the ouille method (topped off, non-oxidative, not sous voile).

Aging

Aged 12 months in barriques, 5-10% of which are new. 38mg/L total sulfur.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken, Comte or aged mountain cheese, or trout with brown butter.

Tasting Profile

Dry white with orchard fruit, a creamy texture, and a stony, saline mineral finish.
