Les Preuses is the most refined of the right-bank Grand Crus, a sun-warmed amphitheater that gives Chablis of richness wrapped in elegance, and Servin's 2023 makes it approachable young. The pure limestone here delivers a generous yet finely chiseled wine, and in this successful, balanced vintage it's already drinking with pleasure. Servin works to preserve clarity and freshness. Not a classic year by their own honest reckoning, but built for early and mid-term enjoyment. Grand Cru Chablis you don't have to wait for.

More about Servin

If you want the full staircase of Chablis from one honest, old-school family, Domaine Servin is about as complete as it gets: Petit Chablis and village Chablis, a handful of Premier Crus, and four Grand Crus, Blanchot, Bougros, Les Clos and Les Preuses.

The Servins have grown grapes in Chablis for centuries; past generations were coopers as well as vignerons. After the Second World War the domaine was among the first in Chablis to sell in bottle, working with the importer and writer Alexis Lichine to ship wine to the United States. Today François Servin runs the estate with his Australian brother-in-law, Mark Cameron, across roughly 35 hectares.

Replanting is done by sélection massale, cuttings from the family's own old vines rather than nursery clones, a preference François says goes back to his father and grandfather. The Grand Crus are hand-harvested, and most wines ferment and age in stainless steel, with old barrels used for a few cuvées such as Bougros and Les Clos, so oak never gets in the way.

Don't overlook Les Pargues, a roughly 10-hectare single parcel south of town between the Premier Crus Montmains and Vosgros that the family has long felt deserved Premier Cru status itself. The house style throughout is classic Chablis: taut, stony and built to age.
