Grand Cru dirt at Kabinett level: this comes from Klamm, a VDP Grosse Lage (Germany's top vineyard tier) that sits right next door to Dönnhoff's Hermannshöhle. The name is old and literal, since a "Klamm" is a cut into the rock of the hill, and the slope lives up to it. It faces south and is among the steepest in the Nahe at 40 to 70 percent, on extremely stony volcanic porphyry mixed with black-grey slate. Dönnhoff got Klamm in the same purchase as a small piece of Hermannshöhle. Cornelius Dönnhoff admits the site took several years to figure out, but of all the styles they tried, the Kabinett kept shining. We've described it as "laser beams and rocks," and we stand by that. The 2025 was fermented and aged in stainless steel and large oak barrels, which fits a family that says winemaking can't create quality, only keep the quality already in the grapes. A bottle that shows why Kabinett from a great site is one of the best deals in German wine.

More about Donnhoff

If you love Riesling, you know the name Dönnhoff. If you don't love Riesling-- yet-- Dönnhoff will teach you why the grape inspires such passion.

Dönnhoff is the greatest estate in the Nahe and one of the best in all of Germany. The family has had four generations to dive deep into their terroir and perfect their winemaking. Their top wines are long-lived and collectible.

That terroir is, of course, key. The Nahe has the most varied soils (including, especially, different kinds of volcanic soil) of any German region, as well as a climate that ranges from very cold high-elevation sites to pockets of Mediterranean warmth. This gives Dönnhoff a painter’s palette of flavors and textures from which to craft a perfect wine.

Tasting Notes & Food Pairings

Perfect Pairings

Vietnamese summer rolls with nuoc cham; green papaya salad; smoked trout on rye with crème fraîche; Sichuan dan dan noodles; glazed ham; mild washed-rind cheeses.

Tasting Profile

Expect the classic Nahe Kabinett profile: lemon, lime and white peach, with a stony, slightly smoky minerality typical of volcanic soils. It's light-bodied and delicate, and its touch of sweetness is balanced by fine, racy acidity, so it comes across as refreshing rather than sweet. The finish typically runs long, clean and precise, more taut than lush.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
