A pét-nat made entirely from Sauvignon Blanc — a grape you almost never see bottled this way, and one that turns out to be perfectly built for it, all nettle and citrus energy under a soft fizz. It comes from Ritoznoj in Lower Styria (Štajerska), the hilly, wind-swept northeast corner of Slovenia where steep marl slopes give whites their aromatic lift and zesty minerality. Izidor Vehovar — Dorcha to everyone — is the third generation of his family here, and he's spent recent years absorbing fresh ideas from his neighbor in the village, Nick Gee of Heaps Good Wine Co., adding a modern twist to what he inherited. The method is about as hands-off as it gets: hand-picked and pressed, settled 48 hours, fermented spontaneously on wild yeast, then bottled just before fermentation finishes so the last of the CO2 stays in the bottle, with no sulphur added. Yields are kept honest at roughly 2 kg per vine off plantings of 5,000 vines per hectare. Expect sediment — that's the point, not a flaw — and stand the bottle up a day ahead if you'd rather drink it clear. Vehovar's own description of his wines is that they aren't classic, but they have a character and an energy, and that's exactly right.

Perfect Pairings

Fried oysters, salt-and-pepper squid, goat cheese on toast with herbs, green asparagus with lemon, Thai green papaya salad, prosciutto and melon, or a plate of fresh radishes with butter and salt.

Tasting Profile

Cloudy and pale, with a soft foamy fizz rather than hard bubbles. Aromas of grapefruit, green apple, nettle and a little bready yeast from the sediment. Light-bodied and dry, with bright, mouth-watering acidity and a faintly chalky, mineral edge. Finishes clean and short, more refreshing than rich. Serve well chilled.
