Made entirely from estate-grown Pinot Noir and bottled sans dosage (zero added sugar), this Brut Nature from Drappier offers a stripped-down, terroir-first take on Champagne. It’s also certified Kosher and Mevushal, making it one of the rare grower Champagnes that caters to both traditional and Kosher drinkers—without sacrificing quality or style.

Expect taut structure and fine bubbles, with aromas of red apple skin, citrus peel, chalk, and a touch of spice. On the palate, it’s racy and textural, with a dry, clean finish that lingers on saline minerality. There's no roundness from dosage—just tension, energy, and the quiet depth of well-farmed fruit.

Serve it with oysters, sashimi, or crisp-skinned poultry. For lovers of Extra Brut Champagne, or those seeking a serious Kosher sparkler with clarity and character, Drappier Brut Nature delivers elegance and edge in equal measure.

The secret to the magic of Drappier -- the only famous House located in the Aube -- is they operate much more in the vein of a grower: they own most of their vines, farm organically and biodynamically (sometimes plowing with a horse), focus on terroir with a slew of single parcel bottlings and continue to push the quality forward with experimentation in every aspect, never settling for status quo. But being able to buy grapes also gives them the flexibility of a House, along with much greater stocks of reserve wine and a huge Cistercian cellar to store a LOT of library bottles.

Professional Reviews

Burghound

BH 90
"A spicy and cool black and blue berry fruit profile where the spice and mineral touches play a prominent role and introduce rich and velvety flavors that possess solid detail and a mouth coating finish that has real depth. This isn't as elegant or dense as the Chambolle but this is very Vosne and delivers more than respectable length. (from a blend of Aux Réas and Les Violettes."

Robert Parker

RP 91
"The 2005 Vosne Romanee (assembled in tank at the time I tasted) displays fresh black raspberry, ginger snap, cinnamon, and fetching florality on the nose, a silken palate of winsome purity and freshness, and a finish of great refinement that mingles marrow and anise with black raspberry and brown spices. The Mugneret sisters (I take the liberty of heading this report with what is about to become their official, unified domaine name) have rendered a 2005 collection illustrating the chiseled-precision, complexity, refinement and restraint for which their wines are famous."

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
