A classified single-vineyard Grüner Veltliner that makes the case for Austria's workhorse grape as serious fine wine. Hermannschachern is a 1ÖTW site above Poysdorf in the Weinviertel — a steep, south-facing slope of chalky loess over Muschelkalk, the shell limestone that gives the wine its salty edge — and Marion and Manfred Ebner-Ebenauer farm their 1.5-hectare parcel of roughly 40-year-old vines organically and biodynamically. They pick late for ripeness but vinify for tension: about twelve hours on the skins, spontaneous fermentation, then six months on the fine lees in steel, with no oak anywhere. What you get is the Weinviertel's signature white pepper wrapped around real salinity and grip. Manfred's family has grown grapes here for fourteen generations and still works out of a 400-year-old cellar; the label itself only dates to 2007.
