Barolo does not get more old-school than this. Elio Sandri lives and works at Cascina Disa in the Perno cru of Monforte d'Alba, farming 7.5 hectares and doing everything the long way around: fermentation in cement, years in enormous Slavonian botti, no fining, no filtration, sulfur only at bottling. This Riserva comes from 2016, a vintage Piedmont growers still talk about in reverent tones. A decade on, it is finally beginning to unwind, all dried rose and sour cherry and tar wrapped around that iron-filing Monforte grip. Production is tiny and Sandri has never once chased attention, which is precisely why everyone chases him. Give it a long decant, or give it another decade.
