Sparkling Riesling from Matthew Denci, one of the more interesting young producers working in the Finger Lakes. Denci worked harvests in Burgundy, Sonoma, the Yarra Valley and Marlborough before settling in upstate New York, and named the winery for the Greek entelecheia — roughly, a thing fully being itself. The project is small and single-minded: Riesling from a handful of dedicated growers, low-intervention winemaking, and no attempt to make the Finger Lakes taste like anywhere else. This one is dry, light-bodied and built on Riesling's natural acidity.
