Torrontés is the great bait-and-switch of Argentine wine: it smells like a flower shop and a bowl of white peaches, then lands on the palate completely dry. Herve Joyaux Fabre came to Mendoza from Bordeaux in the early 1990s, part of a family of French wine negociants, and built his estate at Vistalba in Lujan de Cuyo around very old vineyards — his Malbec includes vines planted in 1908. That Bordelais training shows here as restraint: the aromatics are turned all the way up, but the wine stays crisp and clean rather than soapy or heavy, which is exactly where lesser Torrontés goes wrong. Serve it well chilled and drink it young, while the perfume is at full volume.
