Rose de saignee is the hardest way to make rose Champagne, and this is one of the serious ones: the color comes from macerating whole Meunier berries, not from blending in red wine. The fruit is a single hilltop parcel in Cuisles called Les Bouts de la Ville, vines past forty years old on green clay, cold-infused under a blanket of CO2 for a full week before about half the juice is drawn off by gravity with no pressing at all. It ferments in barrel, ages in stainless steel, and spends three years on the lees before disgorgement at an extra brut level of dosage you could measure in a fraction of a gram. The name means "my father's confidence," for Jean-Marc Mousse, mayor of Cuisles for twenty-five years and the man who handed Cedric the estate. This is a rose to serve at the table rather than by the pool. A fire took the family's winery in the summer of 2026; everyone came through it safely, and this vintage was already in bottle.
