Filipa Pato has helped redefine Bairrada, working with traditional Portuguese varieties and biodynamic farming to craft wines with energy, clarity, and character. This Méthode Tradicional Rosé is her playful but precise take on sparkling wine.

A most surprising sparkling rosé — fruity yet elegant, fun yet made in a serious manner. The three Bs here refer to Baga (80% of the blend), Bical (20%, imparting floral notes, stone fruit flavors, and acidity), each hailing from the region of Bairrada (Portugal’s unsung wine region, but one of our favorites for elegant, restrained wines with moderate alcohol).

More about Filipa Pato

Filipa Pato studied chemical engineering before refining her skills harvesting across Bordeaux, Mendoza, and Margaret River. In 2001, she launched her own Bairrada project with biodynamic farming and minimal-intervention winemaking, creating 'wines without makeup' that express the true nature of the vineyard. Eighty-five percent of her wine exports to thirty countries.

What Skurnik Wines has to say about this wine:

A blend of 80% Baga and 20% Bical harvested early from assorted vineyards in Bairrada (the three “Bs” of the title). Primary fermentation with indigenous yeasts; base wine is unfined and unfiltered. Secondary fermentation via traditional method in bottle followed by nine months’ aging sur lies before disgorgement. No dosage.
